Organized by Philippine Wine Merchants in partnership with Okada Manila, this year’s edition delivered a highly immersive experience that balanced traditional Japanese heritage with modern luxury and contemporary social culture.

The Grand Ballroom was transformed with dramatic Japanese-inspired installations, ambient lighting, and expansive tasting stations. A towering illuminated sumo wrestler installation and striking geisha centerpiece became focal points throughout the evening as guests moved from booth to booth exploring over 200 curated labels from Japan and around the world.
One of the evening’s most talked-about highlights was the live tuna carving ceremony, where master chefs expertly prepared a massive yellowfin tuna using a traditional maguro kiri blade before a captivated crowd. Among the featured breweries, Amabuki from Saga Prefecture drew attention for its innovative brewing philosophy utilizing flower-derived yeasts, resulting in aromatic and highly expressive flavor profiles that stood out throughout the evening.
Izumibashi from Kanagawa Prefecture showcased its cultivation brewery philosophy through elegantly balanced pours made using estate-grown rice and traditional brewing methods, offering approachable yet refined profiles that appealed to both seasoned sake drinkers and newcomers alike.
Nanbu Bijin from Iwate Prefecture emerged as one of the evening’s standout discoveries, attracting guests through its terroir-driven philosophy and beautifully structured expressions including its Organic Junmai, Junmai Ginjo, and Junmai Daiginjo offerings. The booth became a gathering point for guests interested not only in tasting sake, but also in learning more about regional identity, brewing craftsmanship, and the evolving global appreciation for Japanese sake culture.
Kamoshibito Kuheiji from Aichi Prefecture also generated strong interest for its distinctive philosophy that bridges Japanese brewing traditions with French wine concepts and terroir-driven production, resulting in elegant and wine-like flavor profiles appreciated by both wine and sake enthusiasts.
Hakkaisan from Niigata Prefecture showcased the clean, crisp precision long associated with the region’s famed snowmelt water, while Suigei from Kochi Prefecture highlighted food-friendly sake styles specifically crafted to complement rich culinary pairings.
Other respected breweries including Tatsuriki, Kagatobi, Tatenokawa, Hyakujuro, Jinyu, and Gekkeikan contributed to the evening’s diverse range of tasting experiences, offering guests an opportunity to explore the remarkable depth and regional diversity of Japanese sake culture in a single venue.
Beyond sake, the event also featured premium international beverage brands and craft offerings that further elevated the experience. Choya introduced guests to its refreshing Choya Sonic highball—a vibrant blend of umeshu, tonic water, and soda that quickly became a favorite among attendees seeking a lighter and more playful profile throughout the evening.
Japanese craft beer labels including Sapporo and Coedo Beer offered refreshing alternatives alongside the extensive sake lineup, while Nikka Whisky attracted whisky enthusiasts with its refined Japanese expressions, including the highly regarded Single Malt Yoichi.
Meanwhile, Jack Daniel’s brought an American whiskey presence to the ballroom, adding another dimension to the event’s globally curated beverage landscape.
One of the evening’s most unexpectedly sophisticated activations came from Evian, which presented premium water-based cocktails and palate cleansers designed to complement the tasting journey and refresh guests between pairings.
